Oven Roasted Veggie Pasta
Tuesday dinner is always a difficult meal to figure out. It's one of those nights when you're hungry, but nothing sounds good... you're hungry but don't want to leave the house because you're too cozy in your sweats and t-shit...
My usual weekly dinner schedule is as follows: Sunday is dinner with mom and El (usually something fabulous). Monday I usually cook something for Daniel and I (again, fabulous), Wednesday is out to dinner with mommy, and Thursday-Saturday is usually going out to dinner/take out.
So Tuesday is difficult... But I was not in the In-N-Out or microwave TV dinner mood, tonight. I decided to make a mash-up of previously posted meals. I took the oven-roasted tomatoes (here), oven-roasted broccoli and asparagus (here) and combined it with some whole wheat rottini pasta, fresh mozzarell, and VOILA!!! A delicious meal for one of those nights when you're not sure what tastes good!!!
The only changes I made were:
1. Serve the oven roasted tomatoes hot (unlike in the caprese salad, where they'd melt the mozzarella. Here, we want the mozzarella to melt!)
2. No garlic on the broccoli (it would be just TOO many flavors going on.)
